|Twice Baked Sweet Potatoes with Roasted Garlic, Avocado, and Walnuts

I was inspired to make these by this Ellen recipe, and by a friend who said he wanted to try it with sweet potatoes. Instead of going shopping for things like horseradish and 'cashew cream,' I improvised with what I had in the house.
