This is what I do with potatoes: I bake them, as per howtobakeapotato.com. Meanwhile, I fry at least one bulb of garlic with at least one carrot (resulting in sticky, sweet garlic and sticky, sweet, garlicky carrots). And cook a little handful of peas, and mince some fresh onion. Then I mash the potato in a baking dish with a spatula and mix in a huge dollop of sour cream (actually, I like Pinar brand labneh), and everything else. By this time, it's not too hot anymore, so I put it back in the oven for a few minutes, until it starts to brown on top. Salt and pepper at the end.
I've been known to add carmelized onion, boiled eggs, chopped dill or chopped coriander, and even chopped celery. Pictured is the basic version, described above. Once, polarisdib came over and turned this into a dip for potato chips and potato sticks, furthering the poor potato's identity crisis.
