I made Pineapple Zucchini Cupcakes, topped with cream cheese frosting and blueberries.

This was the recipe I used.

Those look beautiful and sound delicious!

Since I planted 18 zuchinni plants in the garden this year (plus I have 4 blueberry bushes), I decided to print out the recipe and will use it this summer.

Pinapple Zucchini


Gourds make awesome filler for cupcakes. I think we've done zucchini once, but I don't recall why we haven't done it recently.

Your piping and blueberry tops are very purdy.

Of course, which of my food replies would be incomplete without saying NOM NOM NOM!

I used to make zucchini bread, when I lived in Texas more than eleven years ago. I hadn't baked anything in ages (that wasn't a casserole or potato), but these came out sooo good.

The square shaped pans were left behind by antivert. I think they're brilliant.
