I followed this technique. They look like this while they're cooking.
I used Alton Brown's hollandaise recipe and grokked the technique from this video. You have to cook the yolks while whisking. I don't have a thermometer, and it was just me, so I tested the temperature with my finger.
These English muffins were not what I expected. I doubt they were even English.
For my first attempt, it was easier to get right than I expected.
And yes, I did eat cupcakes for breakfast, and then eggs benedict for lunch.
