I Couldn't Find Vegan Buns [Feb. 24th, 2013|04:49 pm]

I couldn't find vegan hamburger buns. So I made some.

This is an Amy's burger with cherry tomatoes, red onions, and red chard.

This was a bread machine recipe that called for butter and an egg. I used a flax egg and Bio-Plus-3 margarine. The rolls turned out fluffy and moist and damn good.

Eta: I baked another batch to freeze, and made finger rolls, too.

Brown mushrooms sautéed with garlic and oregano; tomatoes and red chard tossed with olive oil, Bariani balsamic vinegar, and black pepper.

And this time, I declare that the award for "most appropriate icon" goes to dakini_bones.

Because: ohhhh, om nom nom. I just got back from a 42k run, and this post is making me SO. HUNGRY.

(I also have a favourite "sandwich bun" recipe, that makes them come out looking rather like this. But they are so not vegan.)

Finally, thank you so much for the Flax Egg link! I cook vegan just often enough that I find myself looking for egg substitutes, and always seem to come up empty-handed, or with something (e.g: applesauce) that is different enough that I have to make a bunch of other cascading changes to the recipe, which is annoying.

You will be astounded by the flax egg! It's so gluey and bind-y. I feel like making cupcakes or something, even though I'm not much of a baker, because the bread was goood.
