Twice Baked Sweet Potatoes with Roasted Garlic, Avocado, and Walnuts

I was inspired to make these by this Ellen recipe, and by a friend who said he wanted to try it with sweet potatoes. Instead of going shopping for things like horseradish and 'cashew cream,' I improvised with what I had in the house.


I roasted a bulb of garlic...


Scraped two baked sweet potatoes, halved, to their skins and mashed them with the roasted garlic, half an avocado, a few chopped walnuts, a small red chili (seeds removed), and a little vegan margarine...


And put the mash back into the skins and baked them again. I tried to extrude it using a frosting piping bag, but the walnuts kept that from working like I imagined, so I used a spatula to refill the potato shells.


They're delicious, right down to the skins!
